Vegan Mushroom Gravy
Last week as part of our Healthy Holidays series of recipes we told you about Glazed Sweet Potatoes and Mashed Butternut Casserole. Now this week we’re following that up with a new tasty substitute for Turkey Gravy: Vegan Mushroom Gravy!
3.5 cups low-sodium vegetable broth
1 cup chopped white onion
4 cloves chopped garlic
8 oz chopped mushrooms
1 tablespoon hopped rosemary
2 tablespoons chopped thyme
1/4 cup merlot
2 tablespoons reduced-sodium tamari
3 tablespoons nutritional yeast
2 tablespoons whole-wheat or spelt flour
1/4 teaspoon ground black pepper
1. In a large skillet bring 1/2 cup broth to a simmer. Add onion and garlic. Cook for 4 minutes. Stir in mushrooms, thyme, rosemary and cook for 2 minutes, until mushrooms are tender. Add wine and cook for 1 minute. Stir constantly. Add remaining broth and bring to simmer.
2. In a small bowl, whisk tamari, flour, and yeast to form a thick paste. Add mix to a skillet, whisk constantly until paste dissolves. Bring to a boil and cook 1 minute. Stir constantly until done.
