So comes Halloween and we indulge in Halloween candy our kids get or eat some ourselves as we are giving out treats. Left over Candy has to go somewhere. Usually in our bellies. Oh no! Now the weather starts to get colder. We are outside less and less active. The pre winter seasonal disorder starts to hit and then thanksgiving comes and we over eat turkey, mashed potatoes with gravy, wine or beer, then we add pies…pumpkin, key lime, lemon meringue etc.  We then feel less motivated to exercise again and again adding more  and more weight. We start adding the little things into our diet extra cheese, glass of bourbon,wine etc. ext. All of the hour devours, then finishing our plates….. Then come Holiday parties having fudge , cookies, egg nog. nut rolls, figgie pudding(lol),all of our holiday favorites did I forget drinking? How could we forget Holiday drinking.

Weight Loss Camp Recipe of the Week

Blue Cheese Filet Mignon w/ roasted green beans

Weight loss Camp

Prep Time: 10 mins Cook Time: 20 mins Ready In: 30 mins

Yields: 4 servings
Ingredients:
 4 tablespoons bleu cheese crumbles
 1/4 cup plain bread crumbs
 4 teaspoons fines herbs
 1/2 teaspoon olive oil, plus 1 tablespoon
 4 (4-ounce) filet mignon steaks
 Salt and freshly ground black pepper, for seasoning, plus 1/2 teaspoon black pepper
 1 cup organic beef stock
 2 teaspoon crushed garlic
 1/4 cup frozen chopped onion
 2 cups Fresh green beans
Directions:
1. Preheat oven to 400 degrees F. Line a baking sheet with foil; set aside.
2. In a small mixing bowl, combine bleu cheese, bread crumbs, herbs, and 1/2 teaspoon of olive oil; set
aside.
3. Add 1 tablespoon olive oil to a large saute pan and heat over medium-high heat. Season steaks with
salt and pepper and to add pan, but do not crowd. Sear 1 to 2 minutes per side just to brown. Remove
pan from heat and transfer steaks onto prepared baking sheet.
4.Top each steak with 1/4 of blue cheese mixture. Finish cooking steaks in preheated oven for 4 minutes
for medium-rare, 6 minutes for medium, and 8 minutes for well done.
5. Place green beans in steamer for 10-15 minutes. Add salt and pepper for taste
