Holiday Recipes – Fitness Retreat

The holiday season is here and with it comes all of that fatty delicious food we love so much. We know you’ve been trying your very best to keep that winter weight under control, but some times we can’t help it when everything smells so good!

Here are 2 equally delicious and quick recipes that will help you stay fit and not miss out of that holiday feast. Smoked trout spread and Orange-rosemary roasted chicken.

Smoked Trout Spread

Dietitian’s tip: This easy-to-prepare spread can be made up to a week in advance and kept tightly covered in the refrigerator. Serve on whole-grain crackers or thin slices of toasted baguette. Serves 12. Low fat, low sodium, healthy carb.
Ingredients:

  • 1/4 pound smoked trout fillet, skinned and broken into pieces
  • 1/2 cup 1 percent low-fat cottage cheese
  • 1/4 cup coarsely chopped red onion
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon hot pepper sauce
  • 1/2 teaspoon Worcestershire sauce
  • 1 celery stalk, diced

Directions:

  1. In a blender or food processor, combine the trout, cottage cheese, red onion, lemon juice, hot pepper sauce and Worcestershire sauce.
  2. Process until smooth, stopping to scrape down the sides of the bowl as needed.
  3. Fold in the diced celery.
  4. Cover and refrigerate until just before serving.

Orange-Rosemary Roasted Chicken

Dietitian’s tip: Rosemary has an appealing piney flavor. It can be used to season a variety of foods, including roasted vegetables and mushrooms, and even ripe melon. Use it with care, however. Too much can be overpowering. Serves 6. Low Sodium.

Ingredients:

  • 3 skinless, bone-in chicken breast halves, each 8 ounces
  • 3 skinless, bone-in chicken legs with thigh pieces, each 8 ounces
  • 2 garlic cloves, minced
  • 1 1/2 teaspoons extra-virgin olive oil
  • 3 teaspoons fresh rosemary or 1 teaspoon dried rosemary, minced
  • 1/8 teaspoon freshly ground black pepper
  • 1/3 cup orange juice

Directions:

  1. Heat the oven to 450 F. Lightly coat a baking pan with cooking spray.
  2. Rub each piece of chicken with garlic. Dab fingers in oil and rub with oil, and sprinkle with rosemary and pepper.
  3. Place the chicken pieces in the baking dish. Pour the orange juice over the chicken.
  4. Cover and bake for 30 minutes. Using tongs, turn the chicken and return to the oven until browned, about 10 to 15 minutes longer. Baste the chicken with the orange juice from the pan as needed to prevent it from drying out.
  5. Transfer the chicken to individual serving plates. Spoon orange juice from the pan over the top of the chicken and serve immediately.

Client of the Week! Congratulations Kim!!

Congratulations to Kim for losing 7.2 lbs in her first week at Live In Fitness!

Kim lives in Santa Rosa and is a retired Deputy Chief Probation Officer, but works part time doing employee backgrounds and internal investigations. Her biggest struggle in life has always been her relationship with food. For most of her life she has been overweight, trying every diet, which at times left her sad and embarrassed.

Kim chose Live In Fitness because she had always wanted to participate in a weight loss/fitness camp. After researching, she felt this was the right choice for her. She needed a place where she could focus on herself without any distractions, a place to workout hard, feel strong, lose 10 lbs, and to learn something new. The greatest learning experience that Kim will take from Live In Fitness has been by far the nutritional education and guidance, from the nutritionist and from attending the informative lectures.

Kim has always had a positive outlook and loves her life, but this LIF experience has bettered her relationship with food and exercise, helping her find a balance.

This week also proved to be a ‘win-win’ weight loss for several ladies that all started their journey together, sharing an instant bond, a sense of team comradery, motivation, and inspiration. Collectively Kim, along with Sheila, Robin, and Wendy, shed nearly 30 lbs in one week!

Congratulations to Araceli on dropping an amazing 9.7 lbs in one week at Live In Fitness!

 

Araceli lives in El Monte, California and is a business owner, overseeing and operating a Transformation Center. Araceli had attended the Live In Fitness Program back in December of 2017 and knew it was time to revisit and reset when she became discouraged that her weight plateaued and she was starting to sabotage her success by making unhealthy choices. To date, and since attending the LIF Program, Araceli has lost a total of 61.5 lbs and is determined and committed to staying on her personal journey of a healthier and happier lifestyle.

She chose Live In Fitness not once, but twice, so she could physically and emotionally remove herself from distractions, temptations, and be able to focus on her health and fitness. She has always been her own worst self critic and was ready to learn how to be her own biggest fan. She liked the fact that this program, unlike others, held her accountable. The coaches and team are committed, and know how to push each individual client to new heights and reach their full potential.

Flag football and weight training are among her favorite activities. She appreciates the support from the entire LIF Team, but in particular with Coach Blaine & Jay who encourage her daily to strive, hit, and surpass her goals.

The structure and many faceted levels of the Live In Fitness Program allows her to solely focus on herself and her self improvement. The informative lectures, The LIF Plan, the comradely of fellow clients and staff members. By working on internal and external emotions, health and exercise, this allows her to be better in her profession, and more importantly, be there for the important people in her life.

When asked what advice would you give to others considering the LIF Program?

‘Go All In’ – Don’t treat this as a fad diet, but rather that this is a sustainable lifestyle change for life!

There is no secret to this journey we are all on. It’s hard work, which requires dedication and commitment. What you put into this is what you’ll get out. Don’t put off tomorrow, what you can do today.

Congratulations Araceli! You have set your sights on an end goal and have allowed no room to be derailed. Weight loss is a journey and a choice. You reached out for support when you needed it, which shows strength in your character. You should be proud of yourself and your action. When Eric Viscovicz founded his company, he knew the bigger challenges were to come after the clients complete the program. For this reason he created his Aftercare Program for continued support and accountability. He also created FitClub Tv as a web portal for nutrition, exercise workouts, and planning for home.

Live In Fitness – Ben Client of the Week

Ben has kept true to his personal goal and has lost over 60 lbs in 6 weeks!! He is determined to hit that 100 lb marker before leaving the Live In Fitness program.

 

Ben chose to come to Live In Fitness for a few reasons. First and foremost, his cousin attended the LIF program several years ago and was very satisfied with her experience and results. Her personal account and testimonial was a deciding factor for Ben. He also read the positive testimonials online that gave acknowledgement and praise to Eric Viskovicz, for his philosophy and understanding of how to truly adopt a healthy lifestyle change through the unique program he has created. For Ben not only was the program affordable, but also there were no claims to it being a ‘spa’. Instead the intent and focus was learning the tools to make each individual successful in their quest for health. It was important to Ben to eat healthy meals and learn as much as he could about nutrition. Decision made! Ben knew this would be his home for the next 10 weeks..

 

Ben came from an athletic background. Loved skiing with his family, playing basketball, and played hockey from a very young age right into his mid-teens. Following a shoulder injury playing hockey, he started to notice the gradual weight gain. This weight really started to affect his lifestyle in a variety of ways. Simple tasks, such as putting on socks, getting out of bed in the morning, and walking up a single flight of stairs became taxing. This was a concern and Ben saw this as a path that would not end well. It was time for a big change.

 

What have you enjoyed about the LIFE Program?

I love everything the program has offered me! Lectures are daily and these lectures have taught me so much. The staff are all FANTASTIC people who I am really going to miss when I return home. I love the clients too! I’ve met some of the best people here. Being around motivating individuals – both clients and staff – has been the best part of this program. The exercise classes have been great too! I really cannot express how lucky I am to have attended this camp.

My outlook on life has become more optimistic since I first entered this program. I’ve learned so much about myself. The most important lesson I will be taking with me is that hard work can bestow upon you a joy and inner peace that few other things do. I am proud of the work I have put in and I will be bringing this ethic home with me not just in the way of staying active, but in my educational pursuits, and in business as well.

 

What advice would you give others contemplating attending the program?

Long Beach is a wonderful location for a program like this, and it has been a blessing for me to be here, so I would recommend this to anyone who wishes to get healthier and spend some time working on themselves! If you want results, do NOT skip classes!! Follow what the instructors say – each is very qualified and they are there to help you. They are also very empathetic by the nature of the business they do, so please feel comfortable in seeking any of them out. Getting to know the trainers here has been one of my favorite aspects of being here at Live In Fitness. If you want to be fed delicious food, be surrounded by motivating and knowledgeable individuals, and see real results, this is the place for you!

 

Keep up the great work Ben! Your determination and dedication each week does not go unnoticed and is so infectious in a positive way.. You are a great example of why Eric Viskovicz created this LIF program and why he has dedicated his career to mentoring, coaching, and helping others in any capacity he can.

Tell us a little about your backstory and what ultimately made you decide to come to Live-in Fitness?
I spent 6 years in University getting my bachelors of science in marine biology. I never took a semester off, including summer and winter semesters. I was focusing and stressing over school so much that I inevitably gained weight. Some neighbors of my parents told my parents about Live In Fitness and they asked if I would be interested in going. I agreed because eating healthy and working out all day while in sunny California sounded like an amazing time.

Where are you from?
North Houston, Texas

What is your career?
I don’t have one right now. I graduated with my BS in December and I will be starting my masters program this July in New Zealand. I will be getting my masters in marine conservation.

When did you notice a weight pattern or change if it applies?
I have always been chubby. My weight was increasing steadily for years. It wasn’t until a year ago that the scale read 200.

How did it make you feel/or affect your lifestyle?
Seeing that number on the scale was mortifying. But it was during one of my most difficult semesters and I couldn’t focus on weight loss like I wanted to.

What were your biggest struggles?
I struggled with eating. I always made time for exercise. My cardio was decent and I loved lifting weights. But I would never eat at the right times or the right amount.

Why did you choose LIFE?
My parents neighbors went to the Hilton Head location and had great results. They recommended it to my parents who then made the arrangements for me to come here.

How do you feel about your progress so far?
My progress has been incredible. I am so much thinner and stronger than when I got here. My mental state is so much better too. It really is all mental.

What so far about the program has worked for you?
Personal training has been my greatest tool. Learning how to run more efficiently has helped in all areas. Diet is definitely the most important part of weight loss and the chefs have insured my meals are perfect so that I can reach my goals.

What did you enjoy about the program? classes? lectures? staff? clients?
The program has achieved the perfect algorithm to help almost anybody lose weight. The classes are fun and allow me to push myself even harder. The lectures equip us with the knowledge to continue to lose weight once we’re at home. The trainers are fantastic and very knowledgeable. The chefs are kind and accommodating. The housekeeping manager, Lorena, is hard working and attentive. I have surrounded myself with only positive friends.

How has this changed your outlook on Life?
I feel confident that I will continues to lose weight and keep it off on my own. I have asked all the questions I could, learned new techniques to keep my workouts working and bust through any plateaus I might hit. I will keep this up for my health because I want to have a long life.

What advice would you give others contemplating attending the program?
You have to be in the right mind frame before coming here. Know that this program will only work if you have an open mind and a drive to do your best. There may be setbacks, but you have to be smart about how you will overcome them. There are people here that want to see you succeed and they will give you a push in the right direction. Trust them. Trust the process. Listen to your body. You will be surprised at what it can do.
