Protein Muffins

A protein-packed muffin perfect for a snack.

 

Servings 12 muffins

INGREDIENTS

  • 2 cups Kodiak Cakes Power Cakes Flapjack & Waffle mix 
  • 2 scoops vanilla protein powder (20 gr protein per scoop)
  • 11/2 tsp baking soda 
  • 1 ½ tsp baking powder
  • 3/4 cup coconut milk  almond milk unsweetened
  • 2 cups coconut milk
  • 1 egg
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract 
  • 2 tsp honey 
  • 1/4 cup coconut cooking oil (if your coconut oil is not purchased as a liquid, it will need to be melted)
  • 4 oz blueberries 

INSTRUCTIONS

  1. Preheat oven to 350. Mix Kodiak mix with baking soda. Add milk, egg, vanilla, and coconut oil. Stir until smooth. Mix in blueberries.
  2. Line cupcake tin with muffin liners (or spray the muffin pan with non stick oil). Fill 12 muffin liners evenly using all of the mix. Bake for 16-18 minutes or until the toothpick comes out clean. Store in an airtight container.
