TZATZIKI

Ingredients:
 Greek yogurt 1 ½ cup
 Cucumber ½ cup (finely chopped)
 Olive oil 3 tbsp.
 Mint 1 tbsp. (finely chopped)
 Dill 1 tbsp. (finely chopped)
 Lime juice 2 tbsp.
 Garlic 1 clove (finely minced
 Salt & pepper (to taste)

Instructions:
Place the Greek yogurt in a bowl, add the cucumber, mint, dill, garlic,
lime juice and olive oil. Mix it with a spoon, seasoning with salt and
pepper. The flavor should be a little bit sour but very fresh.

HUMMUS

Ingredients:

 Chickpeas 15 oz. cooked chickpeas
 Tahini 1/3 cup
 Roasted garlic 4 cloves
 Olive oil 1 ½ cup
 Lime juice 3 tbsp.
 Cumin ½ tbsp.
 Salt & pepper to taste

Instructions:
Place the chickpeas, tahini, roasted garlic, lime juice, cumin, salt
& pepper in a food procecsor , blend until it is smooth. Add the
olive oil lttle by little until it gets creamy.

CHIMICHURRI

Ingredients
 Parsley 1 cup
 Oregano 3 tbsp.
 Olive oil ½ cup
 Red wine vinegar ½ cup
 Garlic 2 cloves (finely chopped)
 Shallot 1 small piece chopped
 Chili flakes 1 tbsp.
 Salt & pepper (to taste)

Instructions:
Place all the solid ingredients in a food processor and blend
until the ingredients are finely chopped. Remove from
processor and place in a bowl. Mix in the chopped ingredients
with the olive oil and the red wine vinegar, add salt and pepper
to taste.
